Global Sustainability and Food Value Chain

Project Summary:
- This GLE project was conducted between DePaul University students, students from Zurich University of Applied Sciences (ZHAW) in Switzerland, the Hague University of Applied Sciences in the Netherlands, and Meiji Gakuin University in Japan. The project allowed students to experience, view, analyze and apply sustainability concepts to food. They learned to consider the impact food chain activities may have on sustainability. The food value chain is the network of stakeholders involved in growing, processing, and selling the food that consumers eat—from farm to table. Students were put into teams of 8 people and they worked together to create a value chain of a product brand and analyze that value chain based on the prompts for each stage. They brainstormed recommendations to provide to the product brand’s organization and their work was showcased in a final creative video.
